please note because i am a bad cook, you have to use your discretion is using the quantity. the recipe below will make for 4. depending on what ingredients you like, use more or less of.
ingredients:
olive oil
sesame oil
salt
5 mushrooms
1 onion
1 squash
2-3 eggs
1/3 packaged deli ham
1. beat eggs, fry, dice in little 1/2 in. squares, and set aside.

2. dice all the mushrooms, squash, and onion into pieces.with the squash, use only the outer skin part with a bit of the inside. don't ask why. i think my mil said something like it gets too soggy if you use the inside.
put all in the same pan you used to fry the egg. no need to do more dishes.
3. dice up the ham the same size as the egg and place in pan, too.
4. fry with some olive oil.
some juices will come from the ingredients. there's probably a correct terminology but again i'm the wrong person to ask.
cook until a lot of it has evaporated. not all. if you put the rice in now, it become soggy.5. put rice and egg in now and fry with a couple table spoons of sesame oil. add some salt. don't ask how much again. i really don't know. just add a little. taste. then add some more. always better to be bland so that you can add than be salty. just fry for about 5 -7 more minutes.

like i mentioned, i'm no cooker. you can tell by the vegetables that jumped ship from the frying pan.

for hubby and baby.
